I have come to find that really leaning to make cheese is a feel and connection to this ancient food. Growing up in the time of packaged food, I didn't realize that we can make cheese with just milk. But I have milked cows or goats or sheep for most of my life for fun, and really made good cheese when I let go of my expectations and play with the process. And humans have done this everywhere in different ways for ages. How cool!
